I love making a big batch of crockpot chicken. It typically turns out bland and dry, but I will show you how you can turn that chicken into healthy, delicious, 3o minute meals (that are NOT bland). This week we are going to make Mexican inspired meals with the crockpot chicken. The first meal we are going to make with the crockpot chicken is a beautiful Santé Fe Chicken Salad. Its a simple salad, with all the right ingredients that add that crunch!
serves 5-6 large salads
2 heads of romaine lettuce- chopped
1 cup purple cabbage – diced
2 tomatoes- diced
1- 15.5 oz can of black beans -drained & rinsed
1/2 red pepper- diced
2 green onion- diced
1 lime- juiced
1 cup shredded cheese
2 tbsp cilantro- chopped
2 cups – crockpot chicken (recipe in previous post)
1/4 cup Bolthouse Farms Yogurt Dressing — Cilantro Avocado
In a large bowl add the romaine lettuce, cabbage, beans, red pepper, green onion, cheese, cilantro, lime juice, and crockpot chicken. With tongs mix the salad so everything is mixed evenly. Top with the dressing to your liking. If you would like to add some more carbs you can add 1/4 cup of cooked rice, or some crushed tortilla chips. This salad is delicious, simple, and colorful!
I like to use Bolthouse Farms Yogurt Dressing because the nutritional facts are amazing. Typical dressings are heavy on the fats, which fats is NOT bad for you! But for 2 tablespoons, we can get a lot more out of the yogurt dressing vs regular dressing.
