Key Lime Pie Quick Bread

Key Lime Quick Bread–

Is that even a thing? Cause I totally made that up

It’s so good! It’s dense, and its moist! I’m sorry I had to say it! But we don’t do dry breads/cakes around here.

I added a lemon/lime glaze over the top, it took it to a whole new level.

To make-

1/2 cup light butter

1/2 cup + 2 tbsp sugar (Or a very full 1/2cup )

2 eggs room temperature

1/2 cup 2% Greek yogurt (You know I always use @fage)

1 tsp almond extract

5 limes juiced (about 1/3 cup)

1 tsp lime zest

1 cup cup flour

1/2 cup Graham cracker crumbs

2 tsp baking powder

1/2 tsp salt

Glaze

1 cup powdered sugar

1 lemon juiced

1 lime juiced

2 tbsp honey

Preheat oven to 350 degrees.

In a stand mixer or large bowl cream together the butter and sugar. Add eggs and almond extract. Next add greek yogurt, lime juice, and lime zest. Once the wet ingredients are combined add flour, graham cracker crumbs, baking powder, and salt.

Add to a greased bread pan and bake for 30-35mins. Once cooled ( about 10 minutes) add glaze on top. The go to heaven when you eat the first bite
