Having crockpot chicken ready is a game changer. We made these fajitas for dinner in 20 minutes. All I did was cooked some onions and red peppers, then added the shredded crockpot chicken. I also heated up some tortillas then topped with shredded cheese. Topped it all off with Fage Greek Yogurt and salsa. It was delicious and so simple!
All you need is:
1 onion thinly sliced
1 red onion thinly sliced
4 cups shredded crockpot chicken
1/2 cup chicken broth
1 tsp salt
1 tsp onion powder
1 tsp cumin
1 tsp garlic powder
1 tsp adobo sauce
2 cups shredded cheese
1 cup Fage Greek yogurt
1 cup salsa
Heat a large skillet to medium high heat. Spray with cooking spray, then add sliced onion and red pepper. Cook until the onion is translucent, about 8-10 minutes.
Add shredded chicken, chicken broth, and seasonings. Turn heat to low, then simmer for 5-7 minutes.
Heat a small skillet to medium heat. Add tortilla, heat each side for 1-2 minutes, remove from heat then add about 1/4 cup cheese. Repeat
Add about 1/4-1/2 cup of the chicken mixture to the tortillas, then top with yogurt and salsa.
