Coconut Whipped Cream with Berries

YOU NEED THIS DESSERT IN YOUR LIFE. It’s creamy, has a hint of coconut flavoring, it’s dairy-free, and when you pair it with some tart berries that are bursting with flavor… OH MY GOSH! TO DIE FOR! This is the perfect dessert for when you need something to curb that sweet tooth, but don’t want to go over board. This little treat honestly brought summer back as soon as I took a bite. The fresh berries were tart, yet sweet and juicy! I can’t wait for summer to get here!

You only need 4 ingredients for the coconut whipped cream, and you will need to refrigerate the coconut cream for at least 2 hours for the best results.

SERVES: 4-6

PREP TIME: 2 hrs 10 minutes

COOK TIME: 0

TOTAL TIME: 2 hrs 10 minutes

Ingredients to make Coconut Whipped Cream:

1 14oz can coconut cream

1/4 cup stevia or splenda

1/4 cup powdered sugar

1 tsp coconut extract

1 cup raspberries

1 cup blueberries

1 cup strawberries – sliced

How to Make Coconut Whipped Cream:

In a stand mixer, add the coconut cream, stevia, powdered sugar, and coconut extract. Whip on medium high speed for 7-8 minutes. When you turn the mixer off/ lift the top of the mixer, the cream should form stiff peaks. If it does, whip for another 1-2 minutes. Add a scoop of berries and a scoop of coconut cream to a bowl and enjoy!
