GUYS YOU HAVE TO MAKE THESE! I PROMISE THEY ARE WORTH IT. I Know I say this about every recipe, but honestly they are so dang good! Caramel-yyyy, with a hint of butterscotch- just enough to give it that warm burst of flavor! And of course these are so simple to make, you can make them over the weekend with the kids.

To Make-

11oz Caramel bites – I used the Kraft Brand

1 cup butterscotch baking chips

2/3 cups of butter- I used 1/3 cup light, 1/3 full fat (softened)

1/3 cup brown sugar

1/3 cup Splenda or Stevia

1 egg

1 tsp vanilla (you could also use maple)

1 1/4 cup oat flour

3/4 cup All Purpose Flour

1 tsp baking powder

dash of cinnamon

Preheat oven to 350 degrees.

Spray a medium size pot with cooking spray, Heat the pan to a medium heat. Add caramels, let the caramels melt down for about 7-10 minutes. Then add the butterscotch baking chips. Stir continuously until melted. Remove from heat, set to the side.

In a stand mixer add butter, brown sugar, and Splenda. Mix for 1 minute. Add egg and vanilla, mix until combined. Next add oat flour, all purpose flour, baking powder, and cinnamon, stir until combined- do not over mix. Fold in the caramel/butterscotch mixture.

Add to a greased 9×9 baking pan. Bake at 350 for 25-30 minutes.
