580 grams (about 2 cups) butternut squash
1 onion chopped
1 cup milk
4 oz cream cheese 1/3 less fat
1/3 cup plain Greek yogurt
(I used fage)
3 tbsp light butter
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp onion powder
5 oz chickpea pasta
Preheat oven to 425 degrees.
Place butternut squash on a greased baking sheet. Bake for 50 minutes. Once the butternut has cooked, let cool for 10-15 minutes.
Heat a medium size pot to medium high heat. Add 2 cups water or enough water to cover noodles. Salt the water with a pinch of salt. Add noodles cook for about 10-15 minutes. Chickpea noodles do not take as long to cook, so check on the noodles often. Drain the noodles.
Heat a large pot to medium high heat. Spray with cooking spray, then add chopped onions. Once the onions are translucent (about 10 minutes) add butternut squash, milk, cream cheese, yogurt, and butter. Then using a immersion blender, blend ingredients together until smooth. Add the noodles and seasonings, stir to combine.
