Buffalo Chicken Pizza

That special Friday night, Pizza night vibes! My husband hates that word, and it makes me think of him every time! 😂

Friday’s are made for two types of food! Pizza and cookies! Am I right or am I right?

This is the same pizza crust I always use! Its so convenient, has no rise time, it has added protein, and I love the texture/taste! Everyone that tries it, absolutely loves it.
Ok, Ok, Ok! You get it, our family loves this pizza crust! But today, I made it into a Spicy Buffalo Pizza! IT WAS so good! It was spicy, creamy, and oh so delicious! I layered some plain Greek yogurt mixed with ranch dry seasoning on top of the buffalo sauce which was a hit! This recipe takes 30 minutes including the cooking time! Its a win-win for the family and you (not having to spend hours in the kitchen for a homemade pizza crust)!

If you are feeding more than 4, you can easily double this recipe! I suggest to divide the dough into two, making two different pizzas!

Prep Time: 8 minutes

Cook Time: 22 minutes

Total Time: 30 minutes

Ingredients to make Buffalo Chicken Pizza:

5 0z all purpose flour (you can use a GF flour blend, my favorite is Bob’s Mill GF baking mix or Cup4Cup)

220 grams (1 cup) plain Greek yogurt

2 tbsp baking powder

1 tsp salt

1/3 cup buffalo sauce

1/4 cup plain Greek yogurt

1 tsp ranch dry seasoning

6 oz shredded chicken

4 oz 1/3 less fat cream cheese

2 cups shredded cheese

2 green onions- chopped

3 tbsp cilantro- chopped

How to Make Buffalo Chicken Pizza:

Preheat oven to 350 degrees.

In a large mixing bowl add the flour, yogurt, baking powder, and salt, Mix with a fork until clumps form. Next knead the dough into a ball with your hands.

Roll the dough out on a baking silicone mat. If you don’t have one sprinkle a couple of tablespoons of flour the surface. With a rolling pin roll the dough out to a 10-12 inch circle. Cook the pizza dough for 12 minutes.

In a small bowl combine the yogurt and ranch.

Next add your buffalo sauce to the pizza dough. Layer the yogurt sauce on top using a spoon to spread evenly. Next add the shredded chicken, then add chunks of cream cheese through out the pizza. Top with shredded cheese, green onions, and cilantro. Cook the pizza for an additional 12 minutes.

Let cool for 5 minutes and Enjoy!
