Sweet Potato Falafel Salad

What makes a good salad? Obviously its the toppings. This week I have a delicious salad recipe for you. I was inspired by a salad I recently had at Gourmandise Bakery in SLC. It had beets, sweet peas, avocado, feta, olives, and fried sweet potato falafel. It was delicious. I had to remake it, and I did… but I put my own take on it. That’s what I love about food. Everyone can make it in their own way. Its suppose to be fun! So, I made my own Falafel! Although mine turned out flat– they are sooo good and add a bold flavor to the salad. These are super easy to make, all you have to do is throw everything into the food processor, then scoop onto a cookie sheet and bake. One tip though- you need a bigger food processor OR you will need to stop and scrap the sides of a smaller food processor a few times.

Sweet Potato Falafel Salad

Ingredients to Make Sweet Potato Falafel: 1 15.5 oz can of white beans or chickpeas drained & rinsed 1 medium sweet potato 2 carrots handful of cilantro 3/4 cup onion chopped 1/3 cup oats 1/4 tsp paprika 1/4 tsp cumin 1/4 tsp onion powder 1/4 tsp garlic powder 1/4 tsp chili powder 1/4 tsp salt 1/8 tsp pepper Salad Ingredients: 4 cups spring mix 10 oz grilled chicken 1 cup cherry tomatoes halved 1/4 cup banana peppers How to Make Sweet Potato Falafel: Preheat oven to 450 degrees. Cut one medium sweet potato in half. Spray a cookie sheet with cooking spray then cook for 30 minutes. If you already have cooked sweet potatoes skip to next step While the sweet potatoes cook, in a food processor add the white beans, carrots, cilantro, onion, oats, and seasonings. Blend until smooth about 3-4 minutes. May need to stop and scrape the sides a few times. Once the sweet potato has cooked, remove the skin then add to the food processor. Blend for another 2 minutes. Turn the oven down to 400 degrees. Spray the cookie sheet with cooking spray then with a small cookie scooper add a scoop to the cookie sheet. I did 3 across and 5 rows. Bake for 25-30 minutes. Let cool for 2-5 minutes. While the Falafel is baking, put the salad ingredients together. Using a large bowl, layer each ingredient on the bed of greens. Once the falafel has cooled, add to the salad. Enjoy
