Jumbo Shell Pasta
This Jumbo Stuffed Shell recipe is super easy, although it does require a few extra dishes, its well worth the clean up. Its saucy, cheesy, and the perfect comfort food! In this recipe I used 96% ground beef to help balance the fat content. Between the greek yogurt, cream cheese, and shredded cheese this recipe is loaded with all the goods. It also has some onion and green pepper, you know- so you can get your veggies in too! 😉 This recipe takes about 40-45 minutes to make since we need to cook the noodles, cook the beef, and than bake it. It goes quick though as you cook the noodles and beef at the same time (different pots though).

Ingredients to Make Jumbo Shell Pasta: 1 onion diced 1 green pepper diced 1 lbs ground beef 1/2 tsp salt 1/8 tsp black pepper 1/2 tsp oregano 1/2 tsp onion powder 1/2 tsp garlic powder 2 cloves garlic crushed 24 oz marinara sauce 2tbsp chopped basil 1/2 cup low fat greek yogurt 2 cups shredded cheese 4 oz 1/3 less fat cream cheese – cubbed 1/2 box jumbo noodles HOW TO MAKE: In a large pot add 4 quarts of water with a pinch of salt. Bring water to a boil, than add in the noodles. Cook for 9 minutes. Drain and let cool. Preheat oven to 425 degrees. Spray a large skillet, with cooking spray than bring to a medium high heat. Once the pan is hot, add the onion, green pepper, and ground beef. Cook until brown, stirring consistently. Remove from heat, then add the salt, black pepper, oregano, onion powder, garlic powder, and crushed garlic. Then add 1 cup of marinara sauce, basil, and Greek yogurt, stir until combined. Grease a medium size Pyrex dish with cooking spray. Add a couple spoonful of marinara sauce to the bottom of the dish. Lay the jumbo shell noodles out in the dish so the openings are on top. Take a large spoonful of the ground beef mixture, place inside of each noodle until each one has filling. Top with more another cup of marinara sauce, shredded cheese, and cubed cream cheese. Bake fore 20-25 minutes. Let cool for 7-10 minutes than enjoy!
