Frito Taco Salad
For me this salad brings me back to my childhood home, our family sitting around the table. Like I can see it right now :). This was one of my favorite dinners growing up. It was so fun, and what I didn’t see as a child was how easy and simple this dinner was for my mom after a long day at work. The toppings are quick, all you really need to do is cook the meat and assemble the salad together. This salad is a crowd pleaser because everyone can add the toppings they like. If you don’t want the Fritos, simply don’t add them. If the rest of the family does want Fritos go-ahead and add as much as you want. Its a win-win and so delicious. Although the dressing has jalapenos, it very mild since we seeded the jalapenos. If your family loves the heat go ahead and add those seeds :). The dressing pairs perfectly with the taco themed salad. It’s creamy, flavorful, and so simple as you throw everything into the food processor and you are done!
Frito Taco Salad
Ingredients to Make Frito Taco Salad: 1 can 2.25 oz sliced olives 2 green onions sliced 1 jalapeno chopped 3/4 cup plain greek yogurt 1 cup salsa 1 avocado sliced 3 cups romaine lettuce- shredded 16 oz 93% lean ground turkey 16 oz 99% lean ground turkey 1/2 package taco seasoning or 2 tbsps 2 tbsp water 1 9.25 oz Fritos – I used scoops 1 Jar of Basil Jalapeno Dressing (recipe below) How to make Frito Taco Salad: Heat a large skillet to medium-high heat. Spray with cooking spray then add the 93% and 99% ground turkey. Mix so the turkey breaks down into smaller pieces. Cook until brown, then add taco seasoning and 2 tbsp of water. Stir until the turkey is evenly coated with taco seasoning. Remove from heat. In a bowl add 1/2 cup lettuce and 1/2 cup ground turkey, Add the toppings you preferred: olives, green onions, salsa, greek yogurt, jalapenos, basil jalapeno dressing and Fritos. Enjoy! Ingredients to Make Dressing: 2 tbsp oil – I used avocado oil 1/3 cup basil 1 lemon juiced about 2 tbsp 1 garlic 1 jalapeno seeded 1 cup plain yogurt 1/2 avocado How to Make Basil Jalapeno Dressing: Throw all the ingredients in the food processor and blend until smooth. About 1 minute.
