Homemade Red Pepper Queso Dip
A queso dip made with real cheese that’s velvety, rich, and has a mild hint of spice, that’s what I’m talking about. Best part about this dip (besides the flavor) is how you can add this dip to a list of recipes. Pasta- yes! Nachos- duh! pizza- sure thing! Tacos- that’s a given! This super simple queso is ready in 20 minutes, and requires only one pan/skillet. When life is busy this minimal ingredient dip can turn boring dinner into fun dinner. Made with chipotle adobo sauce, cheese, cream cheese, red peppers, onion, and of course a few spices. It’s a creamy, cheesy, dip you will for sure double dip in!
Homemade Red Pepper Queso Dip
Ingredients to make Red Pepper Queso Dip: 1 tsp oil 1/2 onion- diced 1 red pepper- diced 4 oz cream cheese- 1/3 less fat 1 cup sharp cheddar cheese- shredded 1 cup pepper jack cheese- shredded 1/2 cup 2% milk 1 tsp flour 7 oz chipotle adobo sauce 1/4 tsp salt 1/4 tsp cumin How to Make Red Pepper Queso Dip: Heat a medium-large skillet to medium high heat. Add the oil, onion, and red pepper, let cook for 8 minutes. Next add the cream cheese, cheddar cheese, pepper jack cheese, and milk. Stir until fully melted, reduce the heat to medium low heat. Add the flour, spices, and chipotle adobo sauce. Remove from heat, let cool for 2-5 minutes. Enjoy! Top with Salsa, Avocado, or Jalapenos.
