Healthier Jalapeno Poppers
Jalapeno Poppers are my kind of game night food! They are delicious, unique, and oh so fatty! I remember buying a box of Jalapeno Poppers from Costco to enjoy while watching the super bowl back in the day. Oh my gosh, my stomach was so upset after eating those delicious fried poppers! 🙁 I know it doesn’t get easier then throwing frozen Jalapeno Poppers into the oven, but with a little more effort your stomach will be thanking you! I also added some shredded chicken (of course) to add a little protein!
Healthier Jalapeno Poppers
8 Large Jalapeno 6 oz cream cheese 1/3 less fat (softened or microwaved for 30 seconds) 1/2 cup plain greek yogurt (I used Fage) 1 1/2 cups low fat shredded cheese 8 oz shredded chicken 1 tsp garlic dash of garlic powder dash of onion powder 1/2 cup panko bread crumbs How to cook Jalapeno Poppers: Preheat oven to 375 degrees. In a large bowl combine all the ingredients EXCEPT bread crumbs. Mix until combined, then set aside. Cut the tops of the jalapenos off, then cut the jalapeno vertically. Next cut the center/seeds out from the middle of each pepper. Line a cookie sheet with aluminum foil. Spray with cooking spray/no stick spray. This will help the jalapenos/cheese from sticking. With a small spoon scoop the chicken/cream cheese filling into each halved jalapeno. Spread the filling evenly, then place on the cookie sheet. Repeat until all jalapenos are filled. Next top each pepper with bread crumbs. Bake at 375 for 15 minutes.
