Gluten Free has never tasted so good
I have been using Chebe products for years. I absolutely love their products because of how convenient their mixes are. It’s so nice to throw one of their all-purpose bread mixes together to make buns, pizzas, tortillas, or just as is! Another reason I love Chebe is because of the ingredients. Its naturally gluten free, soy free, nut free, and so much more. You will need cheese for these mixes, but there are a lot of dairy free alternatives you can try. In today’s post I’m going to show you how to make Gluten Free Grilled Chicken & Pesto Sandwiches. These are so delicious, and hold up nicely for leftovers the next day. :). Although there are a few extra steps to this recipe, it is still pretty simple and takes about 30-40 minutes to make with cooking time. I promise the whole family will devour the meal with no complaints, the Chebe bread has such a delicious texture/ taste to it. It literally a cheesy- ball as a bun. 🙂 I suggest making the chicken marinate first, letting it sit in the fridge for 20 minutes. While the chicken is marinating make the Chebe mix, then bake for 18-22 minutes. While the Chebe is baking, start the grill up, then add the chicken. SET A TIMER! Then make the pesto.
Gluten Free Grilled Chicken Pesto Sandwiches
Ingredients for Grilled Chicken Sandwiches: 1 box of Chebe + ingredients (see below) 4-6 tbsp pesto (see recipe below) 2 chicken breast (see recipe below) 1 tomato sliced 4 slices of your favorite cheese Ingredients to Make Grilled Chicken: 2 chicken breasts (cut vertically down the middle, then cut in half horizontal) 1/4 cup milk 1/2 tsp salt 1/4 tsp salt 1 tbsp chopped fresh herb (cilantro, parsley, or dill) 1 tsp adobo seasoning How to Make Grilled Chicken: Combine all the ingredients into a bowl, cover with plastic wrap, then let marinate for 20 minutes in the fridge. In the mean time, make the Chebe bread mix. Once the chicken has marinated for 20 minutes, heat the grill (or skillet) to a medium-high heat. Cook on each side for 6-7 minutes. Highly recommend setting a timer. If cooking in a skillet, make sure to spray with cooking spray first. Then cover with lid while the chicken is cooking on each side (with the skillet you may need a couple of more minutes on each side). Ingredients to Make Chebe: I box Chebe All Purpose mix 1 cup cheese 2 eggs 4 tbsp milk or milk alternative 2 tbsp oil (I used Olive Oil) How to Make Chebe All Purpose Mix: Preheat oven to 450 degrees. In a large bowl add all the ingredients together, then using a fork, combine the ingredients. Once the ingredients have been combined, use your hands to knead the ingredients until a ball forms. Separate the bread mix into four equal parts. Form into round circles, then spray the top of each bun with cooking spray or butter. Then add to a greased cookie sheet. Bake for 18-22 minutes. Let cool for 5-10 minutes Ingredients to Make Pesto: 3 oz fresh basil 2 cups spinach 1/2 cup parmesan cheese 1 lemon juiced 2-3 cloves of garlic 2 tbsp olive oil 1/4 tsp salt 1/8 tsp pepper How to Make Pesto: Add all the ingredients to a food processor. Blend until smooth. Stopping a couple of times to scrape down the sides. To assemble the sandwich: Slice one Chebe bun in half, add 1- 1.5 tbsp of pesto, 1 slice of cheese, tomato, and 1 piece of chicken. Repeat for all 4 buns.
