Lava Cakes

When I was young, I thought lava cakes were hard to make. Like you had to stuff the filling in them… and that intimidated me. 😂 Oops! Like most things in life, you just have to do to find out how it really is! Most lava cakes are cooked at a high temperature so the outside is done, but the inside is a warm batter. I made mine a little different. I cooked mine at a lower temp with the inside mostly cooked, but added a nice chocolaty sauce that bakes perfectly into the cake. You can make this recipe in individual ramekins, or in a 9×9 cake pan. Either way this is a really simple and delicious dessert!

Lava Cakes

Ingredients to make Lava Cake: 3/4 cup flour 1 1/2 tsp baking powder 1/2 tsp salt 1/2 cup sugar 1 1/2 tbsp cocoa powder 2 tbsp melted butter 1/2 cup milk 1tsp vanilla 4 tbsp milk chocolate chips or 1/2 cup if using cake pan Topping Sauce: 1/4 cup sugar 1/2 cup brown sugar 1/4 tsp salt 1 tbsp cocoa powder 1 cup boiling water How to make Lava Cakes Individually: Preheat oven to 350 degrees. In a large bowl whisk together the flour, baking powder, and salt. Next add the sugar, cocoa powder, melted butter, milk and vanilla. With a rubber spatula, mix until combined. Spray your ramekins (4) with cooking spray, then place each on on a cookie sheet. Add 1 tsp of chocolate chips to each ramekin. Using a large cookie dough scooper or ice cream scooper, divide the dough evenly between the four ramekins. In a medium size bowl combine the sugar, brown sugar, salt, and cocoa powder. Set aside. Next heat a small sauce pan to high heat. Add 1 cup of water, bring to a boil. Once the water is boiling, turn the burner off, and add the boiling water to the medium bowl. Stir until the sugar and cocoa powder have dissolved. Using a 1/3 measuring cup, add a scoop of the sauce to each ramekin. Bake for 16-18 minutes. Let the cake rest for 5-10 minutes. Note* the dough will be thick, and it will look like you need more liquid. You DO NOT need more liquid, keep mixing until the dough comes together. How to make Lava Cake in 9×9 pan: Preheat oven to 350 degrees. In a large bowl whisk together the flour, baking powder, and salt. Next add the sugar, cocoa powder, melted butter, milk and vanilla. With a rubber spatula, mix until combined. Spray your pan with cooking spray, then add 1/2 cup of chocolate chips evenly to the pan. Add the dough to the pan, with your fingers press the dough so it is evenly spread out. In a medium size bowl combine the sugar, brown sugar, salt, and cocoa powder. Set aside. Next heat a small sauce pan to high heat. Add 1 cup of water, bring to a boil. Once the water is boiling, turn the burner off, and add the boiling water to the medium bowl. Stir until the sugar and cocoa powder have dissolved. Add the sauce evenly over the dough. Bake for 27-30 minutes. Let the cake rest for 5-10 minutes. Note* the dough will be thick, and it will look like you need more liquid. You DO NOT need more liquid, keep mixing until the dough comes together.
