Key Lime Pie Quick Bread

Our family loves Key Lime Pie, but it does require a good amount of time to in the refrigerator to set. So I had an idea to make it into a quick bread, kind of like a banana bread. It's so incredibly easy to throw everything into the stand mixer and then let it bake. This one requires minimum dishes which is also a plus. This quick bread is dense, and moist which is a good thing because its like a cake texture without the work of a cake. The graham cracker crumbs complement the tart limes and balance the bread perfectly. I added a simple tart glaze that really makes this bread one of a kind. You have to try this unique quick bread.

Key Lime Pie Quick Bread

Ingredients to Make Key Lime Pie Quick Bread: 1/2 cup light butter 1/2 cup + 2 tbsp sugar (Or a very full 1/2cup ) 2 eggs room temperature 1/2 cup 2% Greek yogurt (You know I always use Fage) 1 tsp almond extract 5 limes juiced (about 1/3 cup) 1 tsp lime zest 1 1/4 cup cup flour 1/2 cup Graham cracker crumbs 2 tsp baking powder 1/2 tsp salt Ingredients to Make Glaze: 1 cup powdered sugar 1 lemon juiced 1 lime juiced 2 tbsp honey How to Make Key Lime Pie Quick Bread: Preheat oven to 350 degrees. In a stand mixer or large bowl cream together the butter and sugar. Add eggs and almond extract. Next add greek yogurt, lime juice, and lime zest. Once the wet ingredients are combined add flour, graham cracker crumbs, baking powder, and salt. Add to a greased bread pan and bake for 30-35mins. Once cooled ( about 10 minutes) add glaze on top.
