The Best Homemade Banana Cream Pie
On Sunday my mom and I did a Instagram live, bless her heart for being there for my first live. If you were there, thank you 🙂 This recipe was passed down from my late grandma. Its extra special to our family and is only made on Thanksgiving. ITS THE BEST, EVER! Yup, I said it. THE BEST BANANA CREAM PIE…. EVER! It’s easy, but you do need to be paying attention the entire time while making this pie.
Homemade Banana Cream Pie
Makes 2 Pies Ingredients to Make Homemade Banana Cream Pie: 2 pre-made pie crusts 2-3 bananas sliced 1/3 cup cornstarch 1 cup sugar 1/8 tsp salt 3 cups of Milk (2% is what we used) 4 egg yolks – beaten slightly 1 tsp vanilla 1 tsp almond extract Whipped Cream Ingredients: 1 cup whipping cream 1/2 cup powdered sugar 1 tsp vanilla How to Make Custard: Add cornstarch and sugar to a large pot. Whisk together so cornstarch and sugar are well combined. Turn the heat to medium heat. Add 1 cup of milk at a time, Stir milk in-between adding each cup. Once the milk, cornstarch, and sugar are combined, add 1/4 cup of the warm milk mixture to the slightly beaten eggs. Stir just enough to combine. Next add egg mixture to the milk in the pot. Cook until thick, stirring with a whisk continuously. Add vanilla and almond extract. When the mixture has become a thick custard/pudding remove from heat immediately. Add mixture to a airtight container, then cover the top with plastic wrap. This will eliminate a film forming on the top. Refrigerate for 1 hour minimum, or can be prepped ahead of time and refrigerated overnight. For the Pie Crusts: Preheat oven to 400 degrees. Poke holes in the bottom of the pie crusts with a fork or you can use pie weights to eliminate the bottom bubbling up. Bake for 10-12 minutes. Add sliced bananas to the bottom, how much is up to you. Then pour custard to the top. Refrigerate until ready to serve. To make whipped cream: Add whipping cream to a stand mixer. Turn mixer to speed 1, then add powdered sugar and vanilla. Slowly increase speed to medium high. The mixture will thicken, in 1-2 minutes so keep your eye on it. You do not want to overmix. Mixture should be thick and smooth. Add to the top of each pie. Makes enough to top each pie.
