Easy Peach Cobbler
I’m in the middle where I’m not ready to let go of the warm summer days, but can’t wait to decorate for Halloween. Yes, I am one of thooooose people. In our house, we love Halloween, we decorate the house just as much as Christmas. Its a big holiday in the Simply Salted house. I love the change in weather, cooking all the comfort foods, and going out with friends to do all the spooky fun activities. We also have about half of my families birthday’s in October & November, including my husbands so fall time is really special to me. Now I really do feel like I’m getting ahead of myself, which I do every year. I always have to remind myself to enjoy the season we are in now. Anyone else get this way? I’m always ready for summer, then fall, then spring, and recently I have been excited for winter. Weird right? So to help bring us back to these warm summer nights, I’m sharing my perfect peach cobbler with you. Its juicy, tart, buttery, and has the best warm cinnamon/brown sugar flavors. I’m all about the cobbler. You with me on this one? Good, cause it seriously makes the whole dish the most delightful dessert ever. The cobbler needs to be buttery, involve oats, and not dry at ALL. For this crumble I used light butter, but its still moist and actually turned out perfect. The other thing I love about this crumble, is how easy it is to make. No cutting the butter into the flour… Hallelujah! For this recipe you first start out with fresh peaches, this is the perfect time to use those peaches you bought from the farmers market and haven’t eaten yet. Cook them in a oven proof dish. It needs to be a bigger skillet, I would say 17 inches. My skillet is smaller, so I opted for my dutch oven pot instead. Any works, as long as its oven proof. Heat the pan to a medium high heat. Spray with cooking spray, then add the butter. Once the butter has fully melted, add the sliced peaches, cinnamon, nutmeg, vanilla, and brown sugar. Let cook for 3-5 minutes. Next you make the cobbler, its incredibly easy and requires only one bowl. Start by microwaving the butter until its mostly melted. Then adding the flour, oats, baking powder, and brown sugar. Mix with a fork until combined. Add to the cobbler mixture evenly over the peaches. How simple is that? 🙂
Easy Peach Cobbler
Ingredients to Make Easy Peach Cobbler: 1/4 cup butter light 6-7 smaller peaches sliced seeded 1/2 tsp nutmeg 1 tsp cinnamon 1 tsp vanilla 2 tbsp brown sugar Crumble Ingredients: 1/2 cup butter light 1 1/4 cup flour- all purpose 1/2 cup oats 2 tbsp baking powder 1/2 cup brown sugar How to make: Preheat oven to 400 degrees Heat the oven proof pan to medium heat. Spray with cooking spray, than melt the butter. Once the butter has melted, add the sliced peaches, nutmeg, cinnamon, vanilla, and brown sugar. Stir to combine, then let the peaches cook for 3-4 minutes. Set aside In a large bowl add the 1/2 cup of butter. Melt in the microwave for 20 seconds, than add remaining ingredients. Stir until combined. should be a soft crumble texture. Add the crumble/cobbler mixture on top of the peaches. Spread the cobbler so it is evenly distributed oven the peaches. Bake for 25-30 minutes. Ok and you have to enjoy peach cobber with a big scoop of vanilla ice cream, dairy free, vegan, full fat, any works!
