4th of July Berry Crisp

It’s our favorite (summer) holiday this weekend, and what better way to celebrate than with a red, white, and blue Berry Crisp! It’s super simple to make, and I’m sharing some tips on how I make this Berry Crispy a little more healthy. A few things I love about this dessert is the berries. The berries are naturally high in fiber and we all know how important that is for us. 🙂 Berries are high in vitamin E, B6, C, and K1. Along with manganese, and potassium. Berries are incredibly good for you, and there’s no better time to buy them then right now when they are in season. If the berries are not in season for you right now go ahead and buy frozen for this recipe, it will still turn out delicious! Another thing that I love about this crisp is how you don’t need to many additives to make this dessert sweet. All we do is mix the berries with a little swerve sweetener, lemon juice, and vanilla. This allows the berries to really be the star of the show. My favorite part (although I feel like I’m betraying the berries by saying this), is definitely the crisp/crumble that goes on top. How can you not love the oaty–buttery– brown sugar goodness? It really does complete this dish. I like to use light butter in this dish, although people would argue that you need to use full fat. I personally think the light butter works well with this dish. If you are one of those people I would suggest using 6 tbsp of regular butter, and 6 tbsp of light butter. This will still help reduce the calorie/fat without sacrificing the deliciousness of butter.

THE RECIPE

4th of July Berry Crisp

Ingredients to Make 4th of July Berry Crisp: 1 cup quick oats 3/4 cup flour 1/2 cup swerve brown sugar (or regular brown sugar) 1/2 tsp cinnamon 3/4 cup light butter cold Filling- 2 cups strawberries- sliced 2 cups blueberries 1/4 cup brown sugar – swerve 2 tbsp lemon juice 1 tsp vanilla 1/4 cup flour How to Make Berry Crisp: Preheat oven to 350 degrees. Spray a pie crust with cooking spray, then add the berries, brown sugar, lemon juice, vanilla, and flour. Gently mix the ingredients together so everything is evenly coated. Set aside. In a large bowl add the oats, flour, brown sugar, and cinnamon. Mix until combine. Next add the butter, use your hands to work the butter into the dry ingredients. It should be a crumbly texture that is not too dry. Add the crumble evenly over the berries. Bake at 350 degrees for 40-45 minutes. Top with vanilla ice cream or lite whipped cream.
