Tomato Basil Soup Casserole- A Easy & Flavorful way to use leftovers
Last Sunday I made my Tomato Basil Soup for dinner. Soup lasts at least a couple days (when feeding 4+), and about 3 days with just two people. So for lunch this week, we have been eating Tomato Basil Soup. By Wednesday I am done eating soup for lunch… ya feel? I also did not want to waste the soup, so I made it into a casserole. Its a little different then eating soup with grilled cheeses. Turns out this soup is delicious in a casserole! WOW it exceeded all my expectations! Best part is, it took 25 minutes to make! The key to that is having crockpot chicken already prepped. I’ll share what I did for that down below as well. If you are struggling with dinner, weather that be spending too much time in the kitchen, dinner ideas, or if you are eating out for dinner more than once a week, I highly suggest prepping chicken in the crockpot once a week. This will save you at least 30 minutes to an hour in the kitchen. NOT only will it save you time, but you will be feeding you AND your kids delicious balanced meals with minimum effort! I have always believed that having dinner at home is such an important foundation to give your kids. You talk about your day, you connect, you get to see how your kids are doing mentally. Studies have shown that having dinner as a family improves children’s mental health, along with eating more fruits and veggies! That’s my goal is to help you with making simple, healthy, and quick dinners! For the crockpot chicken, this week I made a creamy garlic themed chicken. Most crockpot chicken is bland, but we will take that chicken and make it into a delicious, flavorful meal! To make this weeks crockpot chicken. I used 2 trays of about 8 chicken breasts. We eat a lot of chicken in our house, this lasts us one week.
Tomato Basil Soup Casserole
Serves 6 3 cups of tomato basil soup 2 cups of chickpea noodles 8-10 oz crockpot chicken (recipe below) 1 cup chicken broth 1/2 cup plain Greek yogurt 1/3 cup milk 1 tbsp basil – I used a lightly dried one by Gourmet Gardens 1 tsp of salt, garlic powder, onion powder, oregano 1/2 cup parmesan cheese shredded Preheat oven to 350 degrees Add all the ingredients except the parmesan cheese to a large bowl. Stir until all the ingredients are combined. Add to a 9×13 pan, the top the casserole with parmesan cheese. Bake for 20-25 minutes. Also, a great side to this casserole would be some fresh French bread or sourdough bread. Seriously so easy and delicious! My Creamy Garlic Crockpot Chicken 16 chicken breasts 2 cups of milk— a dairy free alternative does work preferably unsweetened 6 oz 1/3 less fat cream cheese 4-6 cloves of crushed garlic about 1 tsp of the following- adobo seasoning, salt, pepper, onion powder, garlic powder, paprika, and oregano Spray the crockpot with cooking spray, throw everything inside, stir, then cook for 6 hours.
