Jalapeno Popper Chicken Chili
1 tbsp olive oil 1 jalapeno seeded and chopped 1/2 onion chopped 1 red pepper diced 10 oz butternut squash diced and cubed (I used frozen) 2 garlic cloves chopped 1/2 cup cilantro chopped 4 slices of turkey bacon diced 3 chicken breast fat trimmed 1/2 cup chicken broth 1/2 tsp salt 1/4 tsp black pepper 1/2 tsp adobo seasoning 1/4 tsp cumin pinch of cayenne 1/4 tsp smoked paprika 1/4 chili powder 6oz 1/3 less fat cream cheese Top with your favorite cheese. Add all the ingredients except the cream cheese into the crockpot. Cook for 5 hours on high. Once cooked, add the cream cheese. As you are mixing the cream cheese, take two forks and shred the chicken. Serve with tortillas, tortilla chips, and your favorite cheese.
