Indian Butter Chicken
Why is Indian food take out so expensive? Last week we ordered some from a local restaurant and I was shocked at how little of the food we received! Especially for how much we paid for it. Itโs crazy how much you pay for convenience! This is one reason why I love crockpot chicken. It may seem boring, but it is very convenient to have on hand when you want nothing to do with making dinner. So with that said, of course, I made my own version ๐ I made mine with crockpot chicken, but you can easily cook 1lb of chopped chicken with some salt, pepper, and oil. Remove from the pan once cooked, then you are ready to start the recipe listed below. It turned out delicious! I also made some naan bread that paired perfectly.
Indian Butter Chicken
Ingredients to Make Indian Butter Recipe: 1/2 onion- diced 2 tbsp butter 2 tbsp garlic or 3 cloves 1 tbsp ground ginger 1 tbsp garam masala 1 tsp cumin 1/2 tsp turmeric dash chili flakes 1/2 cup tomato paste 1 cup water 1 โ 14oz can lite coconut milk 1lb cooked chicken- chopped 1/2 tsp salt How to Cook Indian Butter Chicken Recipe: Heat a large skillet to medium heat. Spray with cooking spray, then add the diced onion. Cook for 6 minutes. Add the butter, garlic, ginger, garam masala, cumin, turmeric, and chili flakes. Cook for 2 minutes. Next, add the tomato paste and cook for an additional 2 minutes. Reduce the heat to low, then add water and coconut milk. Stir to combine, let simmer for 5 minutes. Add the chopped chicken and salt. Stir to combine, then simmer for 5 minutes. You can top with cilantro, green onions, greek yogurt, etc. We did all the above ๐ Thatโs it! A simple, minimal ingredient, delicious meal in 30 minutes.
