Crockpot Chicken Fajitas
Having crockpot chicken ready is a game changer for when you don't want to cook dinner, or don't have time to make dinner. We always have a container of it in our fridge. Dinner can be made in no time at all, today we made chicken fajitas for dinner, which only took 20 minutes. It's a healthy alternative on those days when you don't want to cook at all. All I did was cooked some onions and red peppers, then added the shredded crockpot chicken. I also heated up some tortillas then topped with shredded cheese. Topped it all off with Fage Greek Yogurt, salsa, and shredded lettuce. It was delicious and so simple, so I wanted to it with you.
Crockpot Chicken Fajitas
1 onion- thinly sliced 1 red pepper- thinly sliced 4 cups shredded crockpot chicken 1/2 cup chicken broth 1/2 tsp salt 1/4 tsp onion powder 1/4 tsp cumin 1/4 tsp garlic powder 1/4 tsp adobo sauce 6-8 tortillas 2 cups shredded cheese 1 cup Fage Greek yogurt 1 cup salsa 1 cup shredded lettuce Heat a large skillet to medium high heat. Spray with cooking spray, then add sliced onion and red pepper. Cook until the onion is translucent, about 8 minutes. Add shredded chicken, chicken broth, and seasonings. Turn heat to low, then simmer for 5-7 minutes. Heat a small skillet to medium heat. Add tortilla, the evenly spread 1/4 cup of cheese. Let it cook until the cheese is melted. Repeat for how many people you are cooking for. Add about 1/4-1/2 cup of the chicken mixture to each tortilla, then top with yogurt, salsa, and shredded lettuce.
