Crockpot Chicken & Collard Greens with Orzo Pasta

Wow what a name right? Hahaha Its a bowl of delicious-ness, that’s what it should be called. The hardest thing about this dish, is waiting for the Orzo pasta to cook fast enough. 🙂 This meal is hearty, delicious, and before you knock it, try it! The collared greens have a mild flavor, but hold their shape more than spinach. You could easy swap the collard greens for spinach, but I highly suggest sticking with the CG before spinach for this one. This is a great meal where you can throw it all in the pan so it doesn’t go bad. Stick with meat that has flavor, if you do not have any Canadian bacon, use regular bacon. If you don’t have collard greens, use kale or spinach. If you have some leftover pesto, throw that in as well.

Crockpot Chicken & Collard Greens with Orzo Pasta

Ingredients to Make Collard Greens with Orzo Pasta: 6 oz crockpot chicken 6 oz Canadian Bacon- chopped 2 chicken sausage links – I used Aidells Italian Style 3 cups collard greens- steams removed- I buy mine in a bag already chopped! 1 tbsp coconut oil 1 tsp salt 1/2 tsp onion powder 1/2 tsp garlic powder 2 tbsp nutritional yeast 2 cups orzo pasta How to Cook Collard Greens with Orzo Pasta: Cook the orzo pasta with 4 cups of salted water for 15 minutes on medium high heat. In a large skillet add the Canadian bacon, sausage, and collard greens. Cook until the greens have turned that bright green color, about 5 minutes. Turn the heat to simmer then add the crockpot chicken, coconut oil, and seasonings. Let it cook for another 2 minutes. Remove from heat. Drain the orzo pasta once it has cooked, then add to the skillet. Stir to combine. That’s it! If you have some pesto, drizzle that on top, it would be delicious!
