Dinner time can be rough. Between soccer practice, school, work, working out, making time for your relationships, and of course helping the kids (or your own) with homework. Making dinner for the family is the last thing you want to do. I have a solution for you— take 5 minutes to prep the meat in the slow cooker. Set the timer for 8 hours and when you come home you will feel the weight of the world come off your shoulders. Slow cookers are the best for the “no time” life. I promise if you take the 5 minutes to prep this meal in the morning, you will thank yourself when five o’clock hits. The best thing about this slow cooker roast, you can make so many different meals with it. Throw it on some toasted hoagie buns, top with some cheese, spinach, and banana peppers for dinner in 10 minutes or less. Heat a couple of tortillas, add the shredded beef, cheese, peppers, salsa, or queso for a delicious quesadilla. Or cook some gnocchi with your favorite pasta sauce then add the shredded beef for a Italian night special. All of these are quick, fun, and delicious ways to use that slow cooker roast when you need something quick. Prepping/Cooking your meat ahead of time says you 20-30 minutes easy. It’s also quicker then stopping by del taco on your way home…. I see that drive through line from 5-11pm (YES TILL 11pm). Not only is it quicker, but your body/mind will feel a million times better. It’s not even about loosing weight, it about feeling good. When we feed our bodies quality food, we feel so much better. Let’s work on eating from home just one more day then what we usually do.
