Healthy Chicken Ramen

Ever find yourself trying to find more time? Of course, right. With a world that is so busy, and so many things pulling your attention. Time is a valuable thing. Its like that quote where the days are long, but the years are short. With all that said, using my crockpot saves me when it comes to dinner time. Protein is the center of our meals, so I will always plan around that. Steak, chicken, pork, whatever it is 9 out of 10 times I’m prepping it in the crockpot. Heck its great for leftover lunches too. You can reuse without getting bored. Like this healthy chicken ramen recipe that I made the other night. There was a great amount of feedback, so I wanted to share the recipe for you to refer back to.

THE RECIPE

Healthy Chicken Ramen

Ingredients you will need: 4 slices turkey bacon chopped 1/2 onion sliced 32 oz chicken broth 1 can coconut milk lite 4-6 cloves chopped garlic 2 tbsp ginger paste 2 tbsp soy sauce lite 2 tbsp fish sauce 2 tbsp chili sauce 1 tbsp rice vinegar ( i used toasted sesame) 1 zucchini thinly sliced or zoodles 1/4 package of egg noodles 2 cups chopped kale 10-12 oz cooked chicken breast or thighs- roughly chopped 1/4 tsp salt 2 green onions sliced In a large pot, cook the bacon and onion together. Once cooked add the chicken broth, coconut milk, garlic, ginger paste, soy sauce, fish sauce, chili sauce, and rice vinegar. Stir to combine, then add noodles. Cook for 8 minutes, then add zucchini noodles and chopped kale. Reduce the heat to low then stir to combine. Add chicken and salt to taste. Top with some green onions and enjoy. Super simple, and absolutely hearty and flavorful.
