Green Goddess Pita with Basil Jalapeno Dressing

You Know what makes boring dishes good…….? Dressings/Sauces! Seriously what takes sweet potato fries to the next level…. BBQ sauce, Salads…. cottage cheese (my favorite healthier alternative) or ranch. So lets make an amazing go-to healthier dressing that you can add to salads, pitas, wraps, or even a sandwich. It’s so versatile and brings so much flavor to our basic meals. We love pitas around here. Top them with sauce, chicken, turkey pepperoni, and cheese for the perfect personal pizza. Cut them in half and stuff those pockets with chicken, avocado, lettuce, and some basil jalapeno dressing for the perfect nutrient dense meal within 5 minutes. Another addition to these pitas are grilled chicken. Grilled chicken is my favorite way to eat chicken, its quick, adds so much flavor, and reminds me of summer every time. Its also a great way to meal prep, as it keeps really well in the fridge for the week. Prepping your meat ahead of time is so convenient, I highly suggest doing this if you finding yourself eating out more than two times a week. Not only will it save you time, but also money. EATING OUT IS SO EXPENSIVE, and while it is convenient we can make a few adjustments one day a week to save you so much money. I mixed it up by making chicken kabobs. I only added chicken but adding some onions, zucchini, and peppers would be amazing! Add to a bed of lettuce, then topped with this basil jalapeno dressing and you have a flavorful delicious salad in less than 10 minutes. HOLLLLLAAAAA

THE RECIPE

Green Goddess Pita with Basil Jalapeno Dressing

Ingredients to Make Dressing: 2 tbsp oil – I used avocado oil 1/3 cup basil 1 lemon juiced about 2 tbsp 1 garlic 1 jalapeno seeded 1 cup plain yogurt 1/2 avocado Ingredients for Pita: 6 pitas 2 cups lettuce shredded 1/2 avocado sliced Ingredients for Chicken: 8 chicken breast sliced in half vertically 1/2 cup Milk (any dairy alternative works as well) 5 cloves of garlic crushed 1/4 parsley chopped 2 tsp salt 1/2 tsp paprika 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp pepper Soak 20 kabob sticks in water for 30 minutes How to Make Basil Jalapeno Dressing: Throw all the ingredients in the food processor and blend until smooth. About 1 minute. How to Make Pitas: Cut each pita in half, stuff the lettuce, avocado, and chicken into the pita. Then top with 2-3 tbsp of dressing How to Make Grilled Chicken Kabobs: Slice each chicken breast in half vertically. Slice three times vertically to create strips, then horizontally 4 times to create smaller pieces. Add to a large bowl or ziplock bag. Add the remaining ingredients then mix until evenly coated. Add 8 pieces to each kabob. Grill for 7 minutes on high, then 5-7 minutes on the other side.
