Buffalo Chicken
Here's a meal that is delicious, has great ingredients that you will feel good about feeding to your family, and a delicious way to use that crockpot chicken. This recipe is quick, easy, and freaking delicious. I know Buffalo Sauce can be a hit or miss, but with only a 1/4 cup the buffalo sauce is mild. Along with the mild buffalo flavor, There is a lot of creamy goodness inside to balance that Strong buffalo tang. If you are a lover, go ahead and add more sauce.
Buffalo Chicken
Ingredients to Make Buffalo Chicken: 1 carrot shredded 1/2 onion diced 3 ribs of celery diced 12 oz shredded chicken 1 cup Fage yogurt 4 oz cream cheese 1/2 cup milk 1/4 cup buffalo sauce 1/2 tsp salt 1/2 tsp onion powder 1/4 tsp paprika 1/4 tsp pepper 1 tbp chives chopped 1 cup shredded mozzarella (optional) How to Make Buffalo Chicken: Heat a large saucepan to medium high heat. Spray with cooking spray, then add diced onion and celery. When the onions become translucent, add shredded carrots. Cook for 5-7 minutes. Next turn heat to medium low, add chicken, yogurt, cream cheese, milk, buffalo sauce, and seasonings. Stir to combine letting the cream cheese melt, about 10 minutes. Garnish with chopped chives. You can also add shredded cheese on top which is delish! We love to make crunch wraps with this mixture (see picture below). Add to bread or rolls to enjoy a sandwich with lettuce and tomatoes. Or enjoy with crackers, rice, squash, Roasted sweet potatoes, or a salad! Its creamy and delicious either way!
