Baked Buffalo Chicken
So I was going to make chicken parmesan for dinner, but for some reason I keep craving Buffalo sauce. Which is weird because I used to HATE buffalo sauce. So I had an idea to make parmesan chicken buffalo style. I topped the chicken with 1/2 slice of pepper jack cheese and loved how it turned out! I used Ritz crackers which paired really well with the buffalo sauce & pepper jack cheese. Although this recipe does take 40-42 minutes to make, most of the time is cooking time. This meal is quickly prepared, and the results are tender flavorful chicken.
Baked Buffalo Chicken
Ingredients to make Baked Buffalo Chicken: 4 chicken breasts- fat trimmed 1/2 cup egg whites 1 package of crushed Ritz crackers 1/2 tsp salt dash garlic powder dash onion powder 1/3 cup buffalo sauce 4 slices pepper jack cheese How to Make Baked Buffalo Chicken: Preheat oven to 425 degrees. Separate two rectangle containers, and a greased cookie sheet. In one container add the egg whites. In another container add the ritz crackers and seasonings. Mix until combined. Slice the chicken vertically to thin the chicken breast. Dip each chicken breast into the egg whites, then the crushed crackers. Repeat on the other side so the entire chicken breast is covered in the crackers. Place on the cookie sheet. Repeat until all the chicken breast are coated. Bake at 425 for 15 minutes. Remove the pan for the oven then flip the chicken. Add a couple of tablespoons of the buffalo sauce to each chicken breast, then top with 1/2 slice of pepper jack cheese. Place in the oven for another 15 minutes. Remove from oven let rest for 5 minutes. Enjoy.
