Easy Blueberry Muffins- Toddler Friendly
Some mornings you wake up craving something warm, hearty, and something you can add that smooth butter to that melts instantly. That’s how these delicious muffins came to past 🙂 Majority of my recipes are super simple to make, these muffins took five minutes to throw together and take 16-18 minutes to bake. SOO EASY! I had some brown bananas in the pantry so I wanted to put those to good use. They always add a good texture and moisture to baked goods. I mean why else is banana bread so bomb? These muffins are great for a quick on the go breakfasts or great for toddlers when cooking is the last thing you want to do. They keep well for 3-4 days.
Easy Blueberry Muffins- Toddler Friendly
Makes 12 Ingredients for Blueberry Muffins: 31g butter melted 2 bananas 1/3 cup brown sugar 2 eggs 1 tsp vanilla 1/2 tsp baking soda 1 tsp baking powder 1 3/4 cups kodiak cakes 1 tsp cinnamon 1 cup blueberries (I used frozen) How to Make Blueberry Muffins: Preheat the oven to 375 degrees. Spray a muffin tin with cooking spray, set aside. In a large mixing bowl, melt the butter in the microwave. Add the 2 bananas, then smash using a fork. Cream together the butter, bananas, and brown sugar until the sugar has fully combined. Add the eggs, and vanilla until combined. Next add the baking soda, baking powder, Kodiak Cakes, and Cinnamon. Stir until combined. Fold in the blueberries. Add 1/4 cup of the mixture to each cupcake tin. Repeat until you fill the pan. Bake for 16-18 minutes. Let cool for 3-5 minutes.
