Easy Taquitos
Today we are making baked taquitos for dinner! They are delicious and as always so SIMPLE! Also, don’t mind my scratch plate. Black plates show everything! This is the second meal we are making with the crockpot chicken. You can find that recipe a couple posts back. Serves 4 —
Easy Taquitos
How to Make Easy Taquitos: 8-10 oz (2-3 cups) crockpot chicken — depending on how many people you are serving- double if making for 6+ 6oz 1/3 fat cream cheese— softened 1/2 cup shredded low fat cheese 1 tsp salt 1 tsp paprika 1 tsp onion powder 1 tsp garlic powder 1 tsp adobo seasoning 1/4 tsp cumin 12 tortillas Toppings: 1 cup fage yogurt 1 cup salsa 1 avocado mashed with 1/4 tsp salt and a pinch of salt How to Make Taquitos: Preheat oven to 425 degrees. Grease a cookie sheet with cooking spray. Combine the chicken, cream cheese, shredded cheese, and seasonings in a large bowl. Heat the tortillas in the microwave for 30 seconds. This will prevent the tortillas from cracking when you roll them up. Take one tortilla, add about 2 tbsp of the chicken to the middle of the tortilla. Evenly spread the mixture in the middle. Roll the tortilla tight, then place the tortilla on the cookie sheet so the opening is facing down. Repeat until all the chicken mixture has been used. Spray the top of the tortillas with cooking spray, then place in the oven. Cook for 15-20 minutes. Let the taquitos cool for 10 minutes, then add your favorite toppings. We love using greek yogurt and salsa. Guacamole is also delicious on top!
