One Skillet Salsa Chicken & Rice
Ever have those days where you don’t want to cook dinner? But also don’t want to spend $50.00 to eat out with the kids? Here are 3 tips I do, that saves me in these situations. 1. At the beginning of the week, crockpot some type of meat that your family loves. Our go-to is chicken. It’s high in protein, pretty much goes with everything, and its cheaper than most beef options. 2. The second thing I do is have precooked rice on hand at all times. It’s easy to make rice, but sometimes even that can be a daunting task. Rice is such a easy way to add carbs, and pairs well with most dishes. 3. Add some kind of veggie & sauce. You could do red or green peppers, chicken, rice, and some salsa for dinner in 7 minutes. Or another example is broccoli cheddar casserole. Add the broccoli, shredded chicken, rice, a can of creamy chicken soup, and some cheddar cheese. Bake it for 10-15 minutes with minimal effort and dishes. I made this the other day, and it seriously took 8 minutes to make. So I wanted to share the recipe with you for the next time you are in a crunch for dinner.
One Skillet Salsa Chicken & Rice
Ingredients to Make One Skillet Salsa Chicken & Rice 1 red pepper diced 1 jalapeno seeded and diced OR you could use 1 onion diced 2 cups of shredded chicken 2 cups (or containers) of precooked rice 3/4 cup salsa 3/4 cup chicken broth 1 tbsp taco seasoning 2 cups shredded low fat cheese 1/2 cup plain greek yogurt Optional: top with cilantro and sliced avocado How to Make One Skillet Salsa Chicken & Rice: Heat a skillet to medium high heat, then spray with cooking spray. Add the peppers (and/or onion) then cook for 2-3 minutes. Add the shredded chicken, rice, salsa, chicken broth, and taco seasoning. Stir so everything is combined, let cook for 5 minutes then top with shredded cheese. Top with Greek yogurt, cilantro, or sliced avocado.
