One Pot Loaded Mac N Cheese
Homemade Mac N Cheese is so easy! Why have we turned to boxed/packaged cheese if it really is this easy? I’m not sure, but I’m bringing homemade back! This recipe is so simple, and you probably have all the ingredients on hand! I made mine with veggies which added a nice crunch along with health. I love adding veggies and a protein source. It adds balance back into the carb heavy meal. Protein also helps you feel full longer, Its a win win in my book!
One Pot Loaded Mac N Cheese
2 cups elbow pasta 3/4 tsp salt 4-6 quarts of water 2 sticks of celery- chopped 1/2 onion- chopped 1 carrot- shredded 2 jalapenos- chopped/seeded 2 tbs butter 1 cup milk 4 oz 1/3 fat cream cheese 1/2 cup plain greek yogurt 2 cups shredded sharp cheddar cheese 1 tbsp garlic or 2 cloves crushed 1/2 tsp salt 1/4 tsp onion powder 1/4 tsp garlic powder 8oz shredded crockpot chicken In a large pot bring water to a boil. Add noodles and salt, cook for 7-10 minutes. While the noodles cook, I chopped the veggies so they were ready for the next step. Drain the noodles, then grease the same pot with cooking spray. Add the veggies and cook on medium high heat for 7-9 minutes. Once the veggies have cooked, add 2 tbsp of butter, milk, and cream cheese. Stirring until the cream cheese has completely melted. Turn the heat to low, then add the greek yogurt, shredded cheese, garlic and seasonings. Stir until cheese has melted then add noodles, and crockpot chicken. Stir to combine, then remove from heat. Serve Hot!
