One Pot 30 Minute Turkey Tortellini Soup
It’s snowing like crazy here! Which can only mean one thing… SOUP! It’s warm, its filling, and the ultimate comfort food! This soup is one of my absolute favorites. The flavor is magical, and its so good for you! Eating healthy doesn’t need to be strict, it doesn’t have to be boring, and it doesn’t have to take hours to prep the food! Let’s create a balance meal that will FUEL your body, make you feel good when you eat it, and that’s absolutely delicious! That’s exactly what this meal is about! Let’s take a look to see what makes in this soup- Parsley- is a great source of antioxidants. Do you know what antioxidants do in your body? They fight free radicals in the body, which help slow the damage to cells. Antioxidants are also shown to improve your immune system, which is crucial right now. Parsley is also rich in Lutein and beta carotene to help protect your eyes, it has antibacterial properties, and can improve your heart health! Carrots- I mean these crunchy little orange sticks are so good to snack on! Carrots are high in fiber (2g per stick), potassium, biotin, and vitamin A! They are another great vegetable to help fight cancer! Adding veggies to your meals not only gives you vitamin and minerals you need, but adds volume! This will keep you fuller for a longer! Garlic- I need to thank my MIL for introducing me to garlic. She’s Brazilian and a fantastic cook! If you want flavor, add garlic! Don’t be afraid to use 3-4 cloves of garlic! Not only does it add flavor, but it can help with memory, blood pressure, skin, athletic performance, cold/flu, strong bones, and so much more! Ground Turkey- I love ground turkey! I like mixing the 93% with the 99%. When mixing these I feel like the 93% gives the fat that the meal needs to not taste dry. Then adding the 99% gives it that high protein, and balances the fat to protein ratio. Alright and I have a confession, I tried to make this into meatballs, but I forgot breadcrumbs so they fell apart! HAHAHA ! The soup turned out amazing, so this recipe was meant to be!
One Pot 30 Minute Turkey Tortellini Soup
Ingredients to make Ground Turkey Tortellini Soup: 1 lb ground turkey 93% 1 lb ground turkey 99% 2 carrots- shredded 1/2 cup parmesan cheese- I used shaved- but use what you have on hand 1/3 cup parsley- chopped 1 egg 3 garlic cloves- crushed 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp salt 1/2 tsp paprika 24 oz pasta sauce ( I use Hunts its $1.00) 24 oz water 10 oz Rana Tortellini 4 oz cream cheese- I used fat free this time 2 tbsp tomato sauce 1 tbsp red chili paste 1 lemon- juiced How to make Ground Turkey Tortellini Soup: Heat a large pot to medium high heat. Spray with cooking spray. In a large bowl, add the turkey, carrots, parsley, egg, parmesan cheese, and seasonings. Mix until combined. Add to the heated pot, then cook until almost brown about 8 minutes. Stirring continuously. Once the meat has mostly cooked, add the pasta sauce, then fill the pasta can with water and add to the pot. Add the tortellini pasta, cream cheese, tomato sauce, red chili paste, and lemon. Let the pasta cook for 10-15 minutes. Turn the heat off and enjoy!
