Creamy Chicken & Corn Skillet
Meal prepping isn’t for everyone, I get it. The food becomes boring, there’s so many containers, and you spend hours in the kitchen getting the meals ready for the week. Wait did we even mention if it feeds the whole family or just you? I have a solution, it’s something that I have used for many years. It has helped me with saving time, energy, and I’ve created really delicious meals with this method. My number one tip is to cook your meat in the crockpot. It takes 5 minutes, and you can make a variety of meals with it throughout the week. For example you can make tacos, skillet recipes, taquitos , salads, enchiladas, soups, paninis, homemade high protein pizza, and pastas within a few minutes. It also saves my butt when I’m being lazy and dinner is the last thing I want to do after a long day. With that said, you can make dinner in 10-20 minutes depending on how much effort you want to put into dinner. I know that sounds lazy, but the reality is, we all have those days. There is no guilt in this though. Life is so busy and with so much to do this gives you the ability to make a homecooked meal, with minimal effort. Plus, it helps reduce the waste of food. When I know I have the meat cooked in the fridge, it makes it easier mentally to cook dinner. I know I just have to throw a few things together and dinner is ready. Try it, I think you will benefit from this method a lot. So yesterday it was 6:30 at night I was still working and remembered I hadn’t cooked dinner yet. It was late and I was exhausted, but we were hungry and didn’t want to wait for food or spend the money to eat out. I had some rice and some frozen corn so I went with a creamy chicken and corn theme. That’s how I got this recipe, and it turned out bomb! My husband was like what did you do, this is amazing. I can also vouch for it keeping well in the fridge and having it for lunch the next day is sooo good.
Creamy Chicken & Corn Skillet
Ingredients to make Creamy Chicken & Corn Skillet: 2 cups frozen corn 1 green pepper chopped 1/2 onion chopped 3 cups shredded chicken 1 cup rice cooked (I used Jasmine Rice) 1 cup chicken stock 2 tbsp green onions sliced 4 oz cream cheese 1/3 less fat 1/4 tsp salt 1/4 tsp adobo seasoning 1/4 tsp pepper 1/8 tsp onion powder 1/2 cup plain greek yogurt 1 1/2 cups shredded low fat cheese How to make Creamy Chicken & Corn Skillet: Heat a skillet to medium high heat. Spray with cooking spray, then add the frozen corn, green peppers, and onion. Cook for 2 minutes, then add shredded chicken, rice, chicken stock, cream cheese, and seasonings. Stir to combine everything together, let it cook for another 2 minutes. Now the cream cheese should be melted and the chicken stock absorbed, stir again. Turn the heat off, then stir in the greek yogurt and shredded cheese. Let cook for 5 minutes. Done, its sooo easy!
